Simple Meals: Salmon Foil Packet Dinner
Salmon is an incredibly versatile fish. It tastes good with just about anything on it. Since I was able to get salmon at the grocery store this week, I figured I would show you guys a second way to prepare it. Salmon bakes incredibly well. I find mine always comes out perfect when I bake it in the oven. As opposed to letting it roast like the last recipe, this time I baked it in a foil packet. I love this technique because you get a ton of flavor without having to marinate beforehand.
Here is this meal's cast of characters:
2 Tbsp of Soy Sauce
1 tsp of Chili Paste
1 tsp + a Pinch of Brown Sugar
1/2 tsp of Minced Garlic
1/2 tsp of Neutral Oil (Canola, Vegetable, Peanut, or Avocado all work in my experience)
1 Salmon Filet
1/4 Cup of sliced Shiitake Mushrooms
Preparing this meal is almost embarrassingly easy. I like to eat this over rice and pour the leftover marinade from the packet onto the rice.
- Preheat your oven to 425 degrees.
- Combine the soy sauce, brown sugar, chili paste, garlic, and oil in a small bowl or measuring cup. Whisk this together.
- Line a baking sheet with foil, then make another small rectangle of foil. This will be your packet.
- Place the salmon and mushrooms on top of the foil and roll the top portions of the foil together. Fold in one side of the foil.
- Pour the mixture into the open side of the foil packet and seal the rest of the way.
- Bake for 25 minutes, then remove the foil packet from the oven.
- Sprinkle the top of the fish with a pinch more of brown sugar and spoon the sauce over the fish.
- Turn the oven to Broil (High), and let the fish go for 2 or so more minutes. This will caramelize the sugar on top and thicken the sauce.
