Easy Italian Dinner

The picture is on the right. I know, Just when you think you have a pattern going here… I live to fool you. Anyways, since Christmas is the day after tomorrow (or since it's "Christmas Eve Eve"), I think we are all wanting to go a little light on the food in preparation for the feast to come! Just me? Well, you're all still getting this recipe anyways.
Chicken:
1 Packet of Good Seasons Italian dressing mix
1 Package of chicken breasts

1) Prepare the dressing mix as directed, but sub the normal vinegar for white wine vinegar. Submerge chicken breasts in this mixture for an hour or two.
2) Heat a skillet over medium high heat and add the chicken breasts. They will be coated in oil from the dressing, so no need to add more.

Pasta:
1 package of your favorite pasta
1 Jar of your favorite pesto (I like the Mezzetta Napa Valley stuff)

1) Boil the pasta in salted water according to package directions
2) Spoon the desired amount of pesto over the pasta

Bruchetta:
1/4 cup of Balsamic Vinegar
1/4 cup of EV Olive oil
2 teaspoons of sugar
2 Teaspoons of Salt
1 Teaspoon of pepper
2 cloves of Garlic- minced
1 package of a petite variety of tomato (Cherry, grape, etc)

1)Whisk together vinegar, EVOO, sugar, salt, pepper, and garlic.
2) Dice tomato and add to the liquid. Cover with plastic wrap and refrigerate- the longer the better!
3) When you're ready to eat, heat a skillet to medium heat, brush crusty italian bread slices with olive oil, and toast. Top with tomato mixture. Enjoy!
