Its a New Year!
It's a new year! Happy terribly late new year to you all. I am excited that I actually have a scrap of time to blog. Many people make crazy, lofty new year's resolutions. But mine was pretty simple this year: be better to my body, meaning eat more fruits and veggies, as well as use products that are better for me! This wonderful salad came as a result!
Strawberry Balsamic Salad:
*As a note: This is super easy to scale up or down! My original recipe is a self serve portion, but I figured y'all would want the big one!
8 Strawberries, quartered
1 Bag of romaine hearts
1/4 cup of Blue cheese crumbles, plus a couple more table spoons
1/2 cup (minus a tablespoon or two) of Chopped walnuts
5 Oz of Olive oil
1 1/2 Oz of Balsamic vinegar
2 Cloves of garlic finely minced
Salt and Pepper
1. Chop up the romaine lettuce to your liking and throw it in a large salad bowl.
2. Top the romaine with strawberries, blue cheese, and walnuts… Mmm Tasty.
3. In a mason jar, measure the five ounces of olive oil, along with the ounce and a half (or so) of vinegar. Sprinkle in some salt and pepper, then add the garlic. Shake this up and let stand 30 minutes before serving to let all the flavors meld together. *note: The better the vinegar, the better the dressing! Same goes for the oil!
