Quick and Easy Dinner: Shrimp Sesame Stir-Fry

     It was Friday night. I was coming home from work, and I was tired. It was also a rainy day, and I was scared out of my mind driving (as in at one point I was going to deposit a check and it began to rain so hard I could not see with my windshield wipers on high, so I turned around, and proceeded to go home). The last thing I wanted to do was make a meal that takes two hours or so. After a stop at the local Whole Foods and seeing a pack of stir- fry veggies (in addition to a sale on shrimp), I came up with this.





You Need:
1 Pack of Asian Noodles of your choice (located on the Asian foods aisle)
1 Pack of Stir Fry Veggies (or just chop up your own veggies. It doesn't matter)
1 Pound of Shrimp
1 Clove of Garlic
3 Tablespoons of Butter
6 Tablespoons of Sesame Oil
1/3 Cup of Soy Sauce (Shoe or Tamari works)
2 Tablespoons of Canola Oil
3 Tablespoons of Rice Vinegar (also with Asian foods)
1/2 Teaspoon of Sugar
1/2 Teaspoon of Crushed Red Pepper flakes
     You're probably thinking right now, "Only one clove of garlic?". Yes, I know. This is atypical of me. Also, I'm Going to separate this into sections to make it easier.

The Noodles: Put on a big pot of water and let it boil. Throw the noodles in and cook according to package directions. When you drain the noodles, be sure to rinse them. Also, save your pot, you will combine everything in it at the end.

The Shrimp: While you are cooking the pasta, cut up the garlic. Take the garlic and one tablespoon of the butter and put it in a large skillet. Cook your shrimp in batches in the skillet, adding more butter as needed. The shrimp cook for about 1 minute on each side over medium-high heat. When they are done, set them aside on a plate or in a bowl. Make sure to save the garlic also.

The Veggies: In the same skillet you cooked the shrimp in, add three tablespoons of the sesame oil. Let it heat back up, and sauté the vegetables over medium heat to your desired doneness. I like mine crunchy, so I take them off when they deepen in color, but aren't squishy yet.

The Sauce: Combine the soy sauce, remaining sesame oil, rice vinegar, canola oil, sugar, and crushed red pepper flakes. Stir Vigorously.

Now you bring it all together. Put you pasta back into your pot, next add the vegetables, and then your shrimp. Lastly, add your sauce. Toss all of this together, and it is ready to serve! Enjoy!

And in case you are wondering, that would be the light of an electric stove you see. Yes, I cook with electric. Not only that, but a 1992 electric cook top. If I can cook on this, you can cook on anything.
