Balsamic Steak, Potatoes, and the Best Green Beans You'll Eat!

It's Labor-day Weekend! I am happy to announce that I have survived the first week of school, but have incurred a plethora of homework due to skipping a year of science and catching up on the four days of class I missed because of how long it took to get approval, etc. Anyways, It's Labor-Day weekend, which apparently someone has dubbed the last week of summer. Not the case where I love because the weather is still looking toasty at 105 or so for the next week, but.... If I will get to my actual subject.... Labor Day requires grilling! And what better than a slightly fancy twist on your classic steak and potatoes.
     Also, a warning: if you do not like balsamic vinegar, this steak marinade really isn't for you!If you're like me and you love it (actually you can't get enough), then this is your cup of tea.

Balsamic Steak Marinade:
Balsamic Vinegar
1/2 cup of Olive Oil
2 Cloves of Garlic
A pinch of Oregano

     1) Combine 1/4 cup of balsamic vinegar, 1/2 cup of olive oil, 2 cloves of garlic (chopped), and a pinch of ground oregano.
     2) Let marinate in the fridge for at least 8 hours, or overnight. Make sure to turn the steaks half way through. Grill to your desired doneness.

Potatoes:
Small potatoes ( I used tri-colored potatoes, but I liked the golden ones best)
Olive oil
Garlic Olive Oil (You can buy it here, or I will give instructions on how to make your own)
Italian Seasoning
Salt
Pepper

     1) Boil your potatoes. Mine took about 10-12 minutes due to some slight size variance.
     2) Transfer your potatoes onto a baking sheet and smash them open with a potato masher. Don't smash them all the way through though!
     3) Sprinkle with italian seasoning, salt, pepper, and some plain olive oil. Broil them in the oven for about ten minutes
     4) Finish with some garlic olive oil. Enjoy! These are wonderful!

Garlic Olive oil:
2 Cloves of Garlic
1/2 Cup of Olive Oil

     1) Slice garlic and add it to the olive oil. Let this infuse for about 30 minutes. Discard garlic and use oil.

Best Green Beans You'll Ever Eat:
1 Bag of Fresh Green Beans
2 Tablespoons of Butter
1 Shallot

     1) Bring a pot of water to a boil and blanche your green beans for about three minutes. Drain, rinse and set aside
     2) Throw the butter and the chopped shallots in a skillet. Cook it all around until the shallots are getting soft. yummy.
     3) Throw the green beans in the skillet. Warm them up and toss in the butter. Add some salt and pepper. If you're feeling naughty, add some parmesan cheese. You won't regret it.
