Rice Pilaf and Broiled Rockfish!

     Nowhere to be found! Anyways, I love fish. A lot of people don't, and if you are one of those people, I won't hold it against you. I was scared of fish for a long time for two reasons: 1. It is expensive. 2. It is hard to cook. Well, I have found that the second isn't actually true. I will start with the recipe for the Rice Pilaf since it is a little more complex, and takes a little longer.
You Need:
1 Medium Onion
1 Shallot
2 Cloves of garlic
2 Cups of Rice
3 Cups of Chicken broth
1 Bay Leaf
1/4 Teaspoon of Thyme leaves (dried)
2 Tablespoons of Butter
Salt

1) Thinly slice your onion and shallot, and mince your garlic. Toss your butter into a large pot and heat it over medium heat.
2) Add your vegetables to the butter and cook until soft and beginning to look transparent. Add your rice and cook it until the grains look transparent.
3) Add chicken stock and herbs. Bring to a boil of a minute or two, and then reduce to a low simmer. Let the rice cook covered for about 20 minutes.
4) Remove the lid, and be cautious of steam! Season with some salt and it's ready!

Broiled Rockfish
     I almost feel some shame for posting this. It is so easy.
You need:
Rockfish Fillets
Butter
Lemmon Pepper
Salt
Olive Oil
Lemon slices

1) To prepare your broiler pan, put water in the bottom and brush your cooking surface with some olive oil to prevent sticking. (I did this because fish is flaky and sticking could be disastrous!) Set your oven to broil.
2) Put the fish on the broiler pan. Smear some softened butter over the fish, but do so sparingly! Sprinkle with a generous helping of lemon pepper and salt.
3) Add Lemon slices to the top of the fish and broil for ten minutes! Enjoy!
This was served with steamed broccoli with a pat of butter! No recipe because it is so simple!
