Quick and Easy Dinner: Chicken Parmesan

   Everyone loves an easy, 30-minute, one-dish meal! Right? I think so. Chicken parmesan is a classic, but somehow I couldn't seem to find a recipe I liked. Solution: Make up my own.

You Need:
1 Pack of Chicken Tenders (also packaged as breast strips in the meat dept. of your supermarket)
1 Egg
1/4 Cup of Olive Oil
1 Jar of Sauce
1/2 Cup of Bread Crumbs
1/2 Teaspoon of Garlic Powder
1/2 Teaspoon of Crushed Red Pepper Flakes
Salt and Pepper
1/2 Cup of Grated Parmesan + more for top
Fresh Mozzarella (I have also used the Kraft brand Italian 4-cheese blend. Both work great!)

     1) Take a smaller square baking dish. Combine the bread crumbs, garlic powder, crushed red pepper flakes, and some salt and pepper in the bottom. Mix until combined.
2) In a small bowl, Combine the olive oil and egg. Beat this with a fork until combined.
3) Take each chicken tender, and cat it in the egg mixture, then coat it in the crumb mixture. Repeat until you have used all the meat.
4) Gather the excess bread crumbs and sprinkle over the top of the chicken. Next, pour one jar of marinara sauce over the chicken
5) Top with mozzarella and left-over parmesan cheese.
6) Bake at 375 degrees for 25 minutes.

A couple of notes:
* I use chicken tenders because no one in my family ever eats a whole breast. This would be easy to do with breasts also, if that is what you would prefer.
** I serve this with pasta and mix it all together into one dish, but it could be great along side some asparagus, zucchini, or other vegetable of your liking for a low-carb option!
